Healthy chocolate chip cookies recipe

What do I mean by healthy? No dairy, gluten, refined sugar, or soy, and yet DELICIOUS.

Let`s get started. You will need only 30 minutes.

Ingredients:

  • 1/2 cup vegan butter (I used the earth balance soy free version)
  • 1 and 1/4 cups coconut sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup coconut milk
  • 1/4 cup unsweetened applesauce
  • 2 and 1/3 cups 1:1 gluten-free flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips (I used Rayluca Chocolate 70% dark Belgian Chocolate)
  • Sea salt 

How to make:

  • Preheat oven to 375 degrees(F). 
  • Line a baking sheet with parchment paper; set aside.
  • Whisk together the vegan butter, coconut sugar, and vanilla in a large bowl, beating until well combined. 
  • Add the coconut milk, applesauce, and whisk until well combined; set aside. Mix the flour, baking soda, and salt; whisk well to combine.
  • Add the dry ingredients to the wet mix using a sturdy spatula, and stir until the ingredients are well combined. The batter will be thick! 
  • Scoop the cookie-sized mounds of dough onto the prepared cookie sheet. Let them cool in the refrigerator for 10 minutes, then bake for 10 minutes. Press the chocolate chips on warm cookies and sprinkle with sea salt. Even though the cookies will look uncooked, they are still cooking while cooling.
  • Cool cookies on the baking sheet for 15 minutes before transferring them.
  • I've made eight delicious cookies. See below the result.
